Description

Fresh Summer Garden Pasta made with cherry tomatoes, basil, garlic, and olive oil for a simple seasonal dish full of bright flavor.


Ingredients

  • 1 pint cherry tomatoes
  • 1/2 cup olive oil
  • 2 cloves garlic minced
  • 1 cup fresh basil leaves
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • Black pepper to taste
  • 1 pound spaghetti or linguine
  • 1/2 cup freshly grated Parmesan cheese
  • Extra basil leaves for garnish

Instructions

  1. Combine cherry tomatoes, olive oil, garlic, basil, red pepper flakes, salt, and black pepper in a large bowl
  2. Cover and let the mixture sit at room temperature for about 4 hours
  3. Bring a large pot of salted water to a boil
  4. Cook pasta until al dente according to package instructions
  5. Drain the pasta well
  6. Add hot pasta to the tomato mixture
  7. Toss pasta with the sauce and Parmesan cheese until coated
  8. Serve in bowls and garnish with fresh basil and extra Parmesan
