Description

A healthy vegetable casserole made with zucchini, potato, tomato, and herbs baked with cheese.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 large potato
  • 1 large tomato
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh rosemary
  • Salt and pepper
  • 1 cup shredded Italian cheese

Instructions

  1. Preheat oven to 400°F
  2. Dice onion and mince garlic
  3. Sauté onion in olive oil until soft
  4. Add garlic and cook until fragrant
  5. Thinly slice all vegetables evenly
  6. Grease baking dish and spread onion mixture
  7. Arrange vegetables vertically in alternating pattern
  8. Season with salt pepper thyme and rosemary
  9. Cover with foil and bake 30 minutes
  10. Remove foil add cheese and bake 15-20 minutes until golden
