Description

Sunshine Salad is a refreshing fruit salad made with pineapple, bananas, Mandarin oranges, and vanilla pudding mix for a creamy, no-cook summer side dish.

Ingredients

Scale
  • 1 fresh pineapple, cored and cut into chunks
  • 1 can (15 oz) Mandarin oranges in light syrup (do not drain)
  • 2 bananas, peeled and sliced
  • 1 box (4-serving size) sugar-free vanilla instant pudding mix

Instructions

  1. Core and chop the fresh pineapple into bite-sized chunks
  2. Slice the bananas into even rounds
  3. Place pineapple, bananas, and Mandarin oranges with syrup into a large bowl
  4. Evenly sprinkle the dry vanilla pudding mix over the fruit without adding milk
  5. Stir thoroughly until the pudding coats all fruit evenly
  6. Cover and refrigerate for at least 1 hour before serving

Notes

  1. Do not drain the Mandarin oranges because the syrup activates the pudding mix
  2. Do not add milk to the pudding mix
  3. Serve chilled for best texture
  4. Best consumed within 24 hours
