Description
Crunchy Australian cornflake treats coated with a warm mixture of butter, sugar, and honey, then baked in individual paper cups.
Ingredients
Scale
- 4 cups cornflakes, about 100 grams
- 1/3 cup unsalted butter, about 75 grams
- 1/3 cup granulated sugar, about 70 grams
- 1 to 2 tablespoons honey, about 20 to 40 grams
Instructions
- Preheat the oven to 300°F and place 12 paper cups in a standard muffin pan.
- Add the butter, sugar, and honey to a medium saucepan over medium-low heat.
- Stir until the butter melts, the sugar dissolves, and the mixture becomes foamy and frothy.
- Remove the saucepan from the heat and add the cornflakes.
- Fold gently with a wooden or silicone spoon until the coating covers every cornflake.
- Spoon the mixture into the prepared paper cups, mounding each portion slightly above the rim.
- Bake for 10 minutes.
- Cool in the muffin pan for at least 10 minutes, or until the coating feels firm, before serving.
Notes
- Use one tablespoon of honey for mild sweetness or two tablespoons for a stronger honey flavor.
- Prepare the paper cups before cooking because the coating thickens quickly.
- Store completely cooled Honey Joys in an airtight container at room temperature for up to four days.
- Use certified gluten-free cornflakes when preparing this recipe for a gluten-free diet.
