Description

A hearty Super Nacho Appetizer layered with seasoned beef, chorizo, refried beans, melted cheddar cheese, and taco sauce, topped with fresh guacamole, sour cream, tomato, and olives. Perfect for parties and large gatherings.


Ingredients

  • 1/2 pound ground beef
  • 1/2 pound uncooked chorizo
  • 2 cans (16 ounces each) refried beans
  • 1 can (4 ounces) chopped green chiles
  • 3 cups shredded cheddar cheese
  • 3/4 cup bottled taco sauce
  • 3 large ripe avocados, peeled and pitted
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic salt
  • 1 cup sour cream
  • 1 medium tomato, chopped
  • 1/2 cup sliced pimiento-stuffed olives
  • Additional shredded cheddar cheese
  • Tortilla chips

Instructions

  1. Crumble ground beef and chorizo into a large skillet and cook over medium heat until fully browned
  2. Drain excess grease from the cooked meat
  3. Spread the meat mixture in a greased 13×9 inch baking dish
  4. Layer refried beans over the meat mixture
  5. Add chopped green chiles evenly over the beans
  6. Sprinkle shredded cheddar cheese across the dish
  7. Drizzle taco sauce over the cheese layer
  8. Bake uncovered at 400°F for 20 minutes until hot and bubbly
  9. In a bowl mash avocados with lemon juice and garlic salt to make guacamole
  10. Allow the baked mixture to cool for 5 minutes
  11. Top with guacamole, sour cream, chopped tomato, and sliced olives
  12. Garnish with additional shredded cheddar cheese
  13. Serve warm with tortilla chips

Notes

  1. Drain meat well to prevent the nacho mixture from becoming greasy
  2. Allow the baked mixture to cool slightly before adding toppings
  3. Use thick tortilla chips so they hold the topping better
  4. Freshly shredded cheese melts more smoothly than packaged shredded cheese
