Description

This quick and easy stir-fry features juicy shrimp and crisp asparagus tossed in a sweet and spicy chili sauce. Ready in under 30 minutes, it’s the perfect weeknight dinner—fresh, light, and full of flavor. You can stir-fry or bake it, and it’s easy to customize with your favorite veggies or proteins.

Ingredients

Scale
  • 1 lb (450g) medium shrimp, peeled and deveined

  • 1 bunch asparagus, ends trimmed and cut into bite-size pieces

  • 2 tablespoons sweet chili sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • 2 garlic cloves, minced

  • 1 tablespoon olive oil (for cooking)

Optional Add-ins:

  • ½ red bell pepper, sliced

  • Green onions, chopped (for garnish)

  • Sesame seeds (for garnish)

  • Lime wedges (for serving)

Instructions

  1. Prep everything: Trim the asparagus, peel the shrimp, and mix the sweet chili sauce, soy sauce, and sesame oil in a small bowl.

  2. Heat oil: In a large skillet or wok, heat olive oil over medium heat.

  3. Cook garlic: Add minced garlic and stir for 30 seconds.

  4. Add shrimp: Cook shrimp for 2–3 minutes until pink. Flip once.

  5. Add asparagus: Stir in the asparagus. Cook for another 2–3 minutes.

  6. Add sauce: Pour in the sauce. Stir to coat everything. Let it bubble for 1 minute.

  7. Finish and serve: Remove from heat. Garnish with green onions, sesame seeds, or lime wedges if using. Serve hot.

Notes

For a milder version, mix sweet chili sauce with a little honey.

Want it spicier? Add red pepper flakes or sriracha.

Works well with tofu or chicken instead of shrimp.

Great with jasmine rice, brown rice, or quinoa.
