Ingredients
Dry Ingredients:
-
2 cups plain flour (300 g)
-
1/3 cup granulated sugar (75 g)
-
1/2 teaspoon ground cinnamon
-
1 teaspoon baking powder
-
Pinch of salt
Wet Ingredients:
-
3 eggs
-
1 1/3 cups milk (320 ml)
-
1 teaspoon vanilla essence
-
1/2 cup melted butter, cooled (120 g)
Churro Topping:
-
1/4 cup melted butter (60 g)
-
1/2 cup sugar (120 g)
-
2 tablespoons ground cinnamon
Chocolate Ganache:
-
1/2 cup chopped chocolate (90 g)
-
2 tablespoons cream
Instructions
-
Preheat oven to 350°F (175°C). Grease or line mini muffin or donut tins.
-
In a large bowl, whisk together flour, sugar, cinnamon, baking powder, and salt.
-
In another bowl, whisk eggs, milk, vanilla, and cooled melted butter until smooth.
-
Slowly combine dry mixture with wet mixture, stirring into a smooth batter.
-
Fill molds 2/3 full and bake for 20–25 minutes until golden and springy.
-
Cool for 5 minutes, then transfer to a rack. Brush with melted butter and roll in cinnamon sugar.
-
For ganache: melt chocolate and stir in cream until glossy. Dip donuts before serving
Notes
If you don’t have a donut mold, mini muffin tins work perfectly.
Let butter cool slightly before mixing to prevent curdling the eggs.
Double the cinnamon for an extra spiced kick.
Store at room temperature in an airtight container for 3 days, or freeze undecorated bites for up to a month.
