Description

Sweet Hawaiian Crockpot Chicken is a delicious slow-cooked dish featuring tender chicken thighs simmered in a tangy-sweet pineapple sauce. It’s incredibly easy to make and packed with tropical flavors that the whole family will love.


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts

  • 1 cup pineapple juice

  • ½ cup brown sugar, packed

  • ½ cup soy sauce (low-sodium preferred)

  • 1 tablespoon minced garlic

  • 1 teaspoon grated fresh ginger (optional)

  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening, optional)

  • 1 can (15 oz) pineapple chunks, drained

  • Optional: sliced bell peppers or onions for added flavor and color


Instructions

  • Prep the sauce: In a mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic, and ginger.

  • Assemble in slow cooker: Place chicken in the bottom of the crockpot. Pour the sauce over the chicken. Add pineapple chunks and optional veggies if using.

  • Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked.

  • Optional thickening: If you want a thicker sauce, mix cornstarch and water in a small bowl and stir it into the crockpot during the last 30 minutes of cooking.

  • Serve: Shred chicken if desired, and serve over rice with extra sauce spooned on top.

Notes

  • Chicken thighs are preferred for tenderness, but breasts work well too.

  • Garnish with green onions or sesame seeds for added flavor.

  • Pairs well with jasmine rice, brown rice, or steamed veggies.
