Description

Sweet Squash Pickles are a crisp, tangy, and sweet summer snack made with fresh yellow squash and simple pantry ingredients.


Ingredients

Scale
  • 4 small yellow squash sliced
  • 1/2 cup red onion sliced
  • 1 tablespoon kosher salt
  • 1 cup sugar
  • 3/4 cup white vinegar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon dry mustard

Instructions

  1. Slice squash and onion and combine in bowl
  2. Sprinkle salt and refrigerate 1 hour
  3. Drain liquid from vegetables
  4. Boil sugar vinegar and spices until dissolved
  5. Add vegetables and return to boil
  6. Remove from heat and transfer to jars
  7. Chill 24 hours before serving

Notes

  1. Use fresh squash for best texture
  2. Chill fully before eating
  3. Store in refrigerator up to one month
