Sweet Squash Pickles are a crisp, tangy, and sweet summer snack made with fresh yellow squash and simple pantry ingredients.
Ingredients

- 4 small yellow squash sliced
- 1/2 cup red onion sliced
- 1 tablespoon kosher salt
- 1 cup sugar
- 3/4 cup white vinegar
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
- 1 teaspoon dry mustard
Instructions
- Slice squash and onion and combine in bowl
- Sprinkle salt and refrigerate 1 hour
- Drain liquid from vegetables
- Boil sugar vinegar and spices until dissolved
- Add vegetables and return to boil
- Remove from heat and transfer to jars
- Chill 24 hours before serving

- Use fresh squash for best texture
- Chill fully before eating
- Store in refrigerator up to one month
