Description

Taco Ranch Bites are mini, crispy appetizers filled with taco-seasoned meat, creamy ranch dressing, and gooey cheese, all served in a crunchy phyllo shell. These bite-sized snacks combine the bold flavors of tacos with the cool, creamy twist of ranch, making them perfect for game days, casual gatherings, or a quick meal. They’re easy to make, versatile, and sure to be a hit with any crowd.


Ingredients

  • 1 lb ground beef (or ground turkey or chicken)

  • 1 packet taco seasoning (or homemade)

  • 1 can diced tomatoes with green chiles

  • 1 1/2 cups shredded cheddar cheese

  • 1/4 cup ranch dressing

  • 24 mini phyllo shells (store-bought)

  • Optional: jalapeños, black beans, green onions, corn


Instructions

  • Preheat your oven to 350°F (175°C).

  • Place the phyllo shells on a baking sheet, making sure they don’t touch.

  • Cook the ground beef in a skillet over medium heat. Break it apart as it cooks and stir frequently.

  • Once the meat is cooked, drain excess grease and add the taco seasoning. Stir in the diced tomatoes with green chiles and cook for 2-3 minutes.

  • Take the skillet off the heat, then mix in the shredded cheese and ranch dressing.

  • Spoon the taco mixture into each phyllo shell, filling them about halfway.

  • Bake for 8-10 minutes, until the cheese is melted and the shells are golden.

  • Let cool for 2-3 minutes before serving.

Notes

  • To make these vegetarian, substitute the meat with black beans or refried beans.

  • If you prefer a spicier bite, try adding jalapeños or using spicy taco seasoning.

  • You can also use wonton wrappers or mini tortillas if you can’t find phyllo shells.
