Description

This easy Taco Stuffed Peppers recipe is perfect for a quick dinner! Learn how to make taco stuffed bell peppers that are healthy & yummy!

Ingredients

Scale

1 tablespoon olive oil

½ cup diced onion

1 tablespoon minced garlic

1 lb ground turkey or ground beef

4 large bell peppers halved, red orange or yellow

1 cup canned tomato sauce

1 tablespoon taco seasoning

1 cup black beans

1 cup frozen corn

1 cup cooked white rice or brown rice

1 cup shredded cheddar cheese

Instructions

1. Preheat the oven to 350 degrees and prepare a greased 9×13 oven-safe baking dish.

2. In a sauté pan on the stove, heat olive oil on medium high heat for 3 minutes.

3. Cook onions, garlic, and ground turkey in olive oil for 10 minutes or until the turkey is browned.

4. While the turkey mixture is cooking – prepare the peppers. Slice halfway from top to bottom. Remove seeds and any white inner pieces. Place pepper halves in prepared baking dish.

5. When the ground turkey is cooked, remove from the heat. Stir in tomato sauce, spices, black beans, corn and cooked rice until combined.

6. Stuff the peppers with turkey filling (about ¾ cup filling per pepper). Try to pack the filling using a spoon or hands. Top with cheddar cheese.

7. Bake peppers uncovered for 15–20 minutes until cheese melts and peppers soften.

Notes

You can swap rice for cauliflower rice to lower carbs.
