Description

A cheesy, hearty comfort food classic made with ground beef, corn, and cream of mushroom soup, all topped with crispy golden tater tots. This family-friendly casserole is quick to assemble, easy to bake, and perfect for busy weeknights.

Ingredients

Scale
  • 1 lb lean ground beef (450 g)

  • 1/2 medium onion, chopped (70 g)

  • 3 cloves garlic, minced

  • 1 tbsp Worcestershire sauce (15 ml)

  • 1/2 tsp Italian seasoning (2.5 g)

  • 1/2 cup sour cream (120 g)

  • 1 can condensed cream of mushroom soup (10.5 oz / 298 g)

  • 1 can corn, drained (12 oz / 340 g)

  • 2 cups shredded cheddar cheese, divided (225 g)

  • 32 oz frozen tater tots (907 g)

  • Salt and black pepper, to taste

  • Chopped scallions, for garnish (optional)

Instructions

  • Preheat oven to 375°F (190°C). Position rack in the upper third.

  • In a large skillet, cook beef and onion over medium-high heat for 7–8 minutes until browned. Drain excess fat.

  • Add garlic, Worcestershire sauce, and Italian seasoning. Cook 1 minute.

  • Stir in sour cream, mushroom soup, corn, and 1/2 cup cheddar. Mix well.

  • Spread beef mixture evenly into a greased 9×13-inch casserole dish. Sprinkle with remaining cheese.

  • Arrange tater tots in a single layer on top.

  • Bake uncovered for 45 minutes until tots are golden and cheese is bubbly.

  • Garnish with scallions and serve hot.

Notes

Bake uncovered to keep tots crisp.

Swap cream of mushroom soup with cream of chicken if preferred.

Add frozen peas or green beans for more veggies.

For extra cheesiness, add more cheddar halfway through baking.

Reheats and freezes well—ideal for meal prep.
