- 1 cup sour cream
- 32 ounces refried beans, two 16-ounce cans
- 7 ounces canned chopped green chiles, drained
- 1 package taco seasoning mix
- 4 cups shredded Mexican cheese blend, divided
- Chopped green onions, for serving
- Sliced black olives, for serving
- Tortilla chips, for serving
- Nonstick cooking spray
Instructions
- Preheat the oven to 350°F and coat a 13-by-9-inch baking dish with nonstick cooking spray.
- Place the cream cheese and sour cream in a large microwave-safe bowl.
- Microwave on high for 1 minute, or until the cream cheese softens.
- Whisk the cream cheese and sour cream until smooth.
- Add the refried beans, drained green chiles, taco seasoning, and 2 cups of shredded Mexican cheese.
- Stir until the ingredients look evenly combined.
- Spread the bean mixture evenly in the prepared baking dish.
- Sprinkle the remaining 2 cups of shredded cheese over the top.
- Bake uncovered for 25 minutes, or until the cheese melts and the edges bubble.
- Let the dip rest for 5 minutes.
- Garnish with chopped green onions and sliced black olives.
- Serve warm with tortilla chips.

- For advance preparation, assemble the dip, cover it tightly, and refrigerate it for up to 2 days.
