Instructions

  • Prepare the Cookie Dough:

    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a medium bowl, whisk together flour, baking soda, and salt.
    • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract until combined.
    • Stir in the sour cream.
    • Gradually add the dry ingredients, mixing until just combined.
  • Form the Cookie Dough:

    • Scoop dough into 1 ½-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
    • Gently press down the dough balls to flatten slightly, making a small well in the center.
  • Bake the Cookies:

    • Bake for 10-12 minutes, or until the edges are lightly golden.
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Make the Cheesecake Filling:

    • In a medium bowl, beat together cream cheese, powdered sugar, vanilla extract, and heavy cream until smooth and creamy.
    • Once the cookies have cooled, spoon or pipe a generous amount of cheesecake filling into the center of each cookie.
  • Top with Salted Caramel:
