Description

Breakfast Pigs in a Blanket are a fun and delicious morning twist on a classic favorite! Fluffy pancakes or buttery crescent rolls wrap around savory breakfast sausages, creating a perfect balance of sweet and salty flavors. These are great for a quick breakfast, brunch, or meal on the go, served with maple syrup for dipping.

Ingredients

Scale

For the Pancake Version:

  • 1 cup pancake mix (or homemade pancake batter)

  • ¾ cup milk

  • 1 egg

  • 1 teaspoon vanilla extract

  • 12 fully cooked breakfast sausages

  • Butter or oil for cooking

  • Maple syrup (for serving)

For the Crescent Roll Version:

  • 1 can (8 oz) refrigerated crescent roll dough

  • 12 fully cooked breakfast sausages

  • 1 tablespoon melted butter (optional, for brushing)

Instructions

Pancake Version:

  1. Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter or oil.

  2. In a bowl, mix pancake batter according to package instructions or make from scratch.

  3. Dip each cooked sausage into the pancake batter, coating it evenly.

  4. Place on the hot griddle and cook for 2–3 minutes per side, until golden brown and fully cooked.

  5. Serve warm with maple syrup for dipping.

Crescent Roll Version:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. Unroll the crescent dough and separate it into triangles.

  3. Wrap each cooked sausage with a crescent roll triangle, rolling from the wide end to the tip.

  4. Place on the baking sheet, seam side down, and brush with melted butter if desired.

  5. Bake for 12–15 minutes or until golden brown.

  6. Serve warm with syrup or your favorite dipping sauce.

Notes

  • For extra flavor, add cheese inside the crescent roll version.

  • Substitute turkey or plant-based sausages for a lighter option.

  • Make a larger batch and freeze leftovers for an easy reheat-and-eat breakfast.
