Ingredients

Scale

For the Sloppy Joe Filling:

  • 1 lb ground beef (or ground turkey)
  • ½ cup onion, finely chopped
  • ½ cup green bell pepper, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tbsp tomato paste
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp mustard (yellow or Dijon)
  • ½ tsp salt
  • ½ tsp black pepper

For the Grilled Cheese:

  • 8 slices sandwich bread (Texas toast or sourdough recommended)
  • 2 tbsp butter, softened
  • 2 cups shredded cheddar cheese (or 8 slices)
  • 1 cup shredded mozzarella cheese

Instructions

  • Prepare the Sloppy Joe Filling:

    • In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
    • Add chopped onion, bell pepper, and garlic. Cook for 2–3 minutes until softened.
    • Stir in tomato sauce, tomato paste, ketchup, Worcestershire sauce, brown sugar, mustard, salt, and pepper. Simmer for 5 minutes until thickened. Remove from heat.
  • Assemble the Sandwiches:

    • Butter one side of each slice of bread.
    • On the unbuttered side, layer shredded cheddar cheese, a scoop of Sloppy Joe filling, and shredded mozzarella cheese. Top with another slice of bread, buttered side facing out.
  • Cook the Grilled Cheese:

    • Heat a skillet or griddle over medium heat.
    • Place sandwiches in the skillet and cook for 3–4 minutes per side until golden brown and cheese is melted.
  • Serve & Enjoy:

    • Slice and serve immediately with pickles, fries, or coleslaw!

Notes

  • For extra flavor, add a dash of hot sauce or a sprinkle of smoked paprika to the Sloppy Joe mix.
  • Try using pepper jack or provolone cheese for a unique twist.
  • Leftover Sloppy Joe filling can be refrigerated for up to 3 days.
