Description

  • 4 oz (115g) dark chocolate (70% cocoa), chopped

  • ¼ cup (60g) unsalted butter

  • ¼ cup (60g) mascarpone cheese

  • ¼ cup (50g) granulated sugar

  • 2 large eggs

  • 2 tbsp all-purpose flour

  • ½ tsp vanilla extract

  • A pinch of salt

  • Cocoa powder or powdered sugar (for dusting)


Instructions

  • Preheat oven to 375°F (190°C) and grease 4 ramekins with butter, then dust with cocoa powder.

  • Melt chocolate and butter: In a heatproof bowl, melt the dark chocolate and butter together over a double boiler or in short bursts in the microwave. Stir until smooth.

  • Mix wet ingredients: In another bowl, whisk mascarpone cheese, sugar, eggs, and vanilla extract until smooth.

  • Combine: Gently mix the melted chocolate into the mascarpone mixture.

  • Add dry ingredients: Sift in flour and salt, folding gently until just combined.

  • Fill ramekins: Divide the batter evenly into the prepared ramekins.

  • Bake: Bake for 10-12 minutes until the edges are set but the center is still slightly wobbly.

  • Serve: Let cool for 1-2 minutes, then run a knife around the edges and carefully invert onto a plate. Dust with powdered sugar or cocoa powder and serve immediately.
