- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 ½ tsp vanilla extract
- 2 ¼ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup mini chocolate chips (optional)
For the Ice Cream Filling:
- 1 quart (4 cups) of your favorite ice cream (vanilla, chocolate, cookies & cream, etc.)
Optional Toppings:
- Sprinkles
- Crushed nuts
- Mini chocolate chips
Instructions
- Make the Cookies: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla, mixing well.
- In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to the wet ingredients, stirring until combined. Fold in mini chocolate chips if using.
- Scoop dough onto the prepared baking sheet, forming even-sized cookies. Bake for 10–12 minutes or until edges are golden brown. Let cool completely.
- Prepare the Ice Cream: Let the ice cream soften at room temperature for about 5 minutes to make it easier to spread.
- Assemble the Sandwiches: Scoop about ⅓ cup of ice cream onto the flat side of a cookie. Top with another cookie and gently press to spread the ice cream evenly.
- Add Toppings (Optional): Roll the edges of the sandwiches in sprinkles, crushed nuts, or mini chocolate chips.
- Freeze & Serve: Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving. Enjoy!
Notes
- For an extra soft cookie, slightly underbake them and let them cool completely before assembling.
- Experiment with different cookie flavors like chocolate, peanut butter, or oatmeal.
- If you prefer a firmer texture, freeze the cookies before assembling.
