For the Muffins:

  • 2 cups (250g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (150g) granulated sugar
  • 2 tbsp poppy seeds
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs
  • ¾ cup (180ml) buttermilk (or whole milk)
  • ¼ cup (60ml) fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

For the Optional Lemon Glaze:

  • 1 cup (120g) powdered sugar
  • 2 tbsp fresh lemon juice
  • ½ tsp lemon zest

Instructions

  • Preheat & Prep:

    • Preheat the oven to 375°F (190°C).
    • Line a 12-cup muffin tin with paper liners or grease it lightly.
  • Mix Dry Ingredients:

    • In a large bowl, whisk together flour, baking powder, baking soda, salt, sugar, and poppy seeds.
  • Mix Wet Ingredients:

    • In another bowl, whisk together melted butter, eggs, buttermilk, lemon juice, lemon zest, and vanilla extract until smooth.
  • Combine & Mix:

    • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix—a few lumps are fine.
  • Bake the Muffins:

    • Divide the batter evenly into the muffin cups, filling each about ¾ full.
    • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Make the Lemon Glaze (Optional):

    • In a small bowl, whisk together powdered sugar, lemon juice, and zest until smooth.
    • Drizzle over the cooled muffins for extra lemony sweetness.
