Description

Chocolate Lava Cookies are soft and chewy on the outside with a gooey, molten chocolate center. These indulgent treats are a perfect combination of a cookie and a lava cake, making them a delightful dessert for any chocolate lover.

For the Cookie Dough:

  • 1 cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup semi-sweet chocolate chips

For the Lava Filling:

  • 4 oz semi-sweet chocolate, chopped

  • 2 tbsp heavy cream


Instructions

  • Make the lava filling: In a small microwave-safe bowl, melt the chopped chocolate with heavy cream in 20-second intervals, stirring in between until smooth. Refrigerate for 15-20 minutes until slightly firm.

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Prepare the cookie dough: In a bowl, whisk together flour, cocoa powder, baking soda, and salt.

  • Cream butter and sugar: In a separate bowl, beat butter, brown sugar, and granulated sugar until creamy. Add the egg and vanilla, mixing until well combined.

  • Combine and add chocolate chips: Gradually mix in the dry ingredients, then fold in chocolate chips.

  • Shape the cookies: Scoop about 2 tablespoons of dough, flatten it slightly, and place a small spoonful of the chilled lava filling in the center. Cover with another piece of dough and seal the edges.

  • Bake: Place cookies on the baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes, until the edges are set but the center is soft.

  • Cool & serve: Let cookies rest for 5 minutes before serving warm to enjoy the molten center.

Notes

For extra gooey centers, bake the cookies for a minute less.

Store leftover cookies in an airtight container and reheat for 10 seconds in the microwave for a molten effect.

Try using dark or milk chocolate for the filling to adjust sweetness.
