Ingredients

2 cups all-purpose flour

3/4 cup buttermilk

1/2 cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

1 tablespoon red food coloring

Optional: 1/2 cup white chocolate chips or chocolate chips
Instructions

Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.

In a large bowl, whisk together dry ingredients: flour, sugars, cocoa powder, baking powder, baking soda, and salt.

In a separate bowl, combine wet ingredients: buttermilk, oil, eggs, vanilla, and red food coloring. Mix well.

Add wet to dry ingredients and stir until just combined. Do not overmix.

Fold in chocolate chips if using.

Divide batter evenly among the muffin cups, filling each about 3/4 full.

Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.

Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
