Description

Soft, pillowy New Orleans-style beignets inspired by Tiana, fried until golden and finished with a generous dusting of powdered sugar.


Ingredients

Scale
  • 1/2 teaspoon dry yeast
  • 1/4 cup warm water
  • 1/4 cup sugar
  • 2 tablespoons vegetable shortening
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1 large egg
  • 4 cups all-purpose flour
  • 1/2 cup boiling water
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Sprinkle yeast over warm water in a small bowl and stir to dissolve.
  2. Add sugar, shortening, salt, heavy cream, egg, flour, dissolved yeast, and boiling water to a large bowl.
  3. Mix until a soft dough forms.
  4. Cover and rest the dough for 30 minutes.
  5. Roll dough to 1/4-inch thickness and cut into rectangles.
  6. Cover and let dough rise in a warm place for 2 hours.
  7. Heat vegetable oil to 350°F.
  8. Fry beignets in small batches for 2 to 3 minutes, turning until golden brown.
  9. Remove from oil, drain briefly, and dust generously with powdered sugar.

Notes

  1. Fry only a few beignets at a time to maintain oil temperature.
  2. Serve immediately for best texture and flavor.
