Ingredients
-
1 tbsp (15 ml) olive oil
-
1 medium onion, diced
-
3–4 cloves garlic, minced
-
1 lb (450 g) lean ground beef
-
1½ tbsp (10 g) Italian seasoning
-
1 tsp (5 g) salt
-
½ tsp (2.5 g) pepper
-
1 tbsp (15 g) tomato paste
-
4 cups (950 ml) beef broth
-
1 jar (680 g) marinara sauce
-
1 can (410 g) diced tomatoes with juices
-
¼ cup (60 ml) water
-
10 oz (280 g) lasagna noodles, broken in half
-
1½ cups (340 g) cottage cheese
-
½ cup (45 g) shaved parmesan cheese
-
½ cup (55 g) shredded mozzarella cheese
-
1 cup (30 g) chopped spinach
-
Optional Garnish: ½ cup (115 g) cottage cheese, 2 tbsp (5 g) chopped fresh basil
Instructions
-
Heat olive oil in a large pot or Dutch oven over medium heat.
-
Add onion and garlic, sauté for 3–4 minutes until softened.
-
Add ground beef and cook for 4–6 minutes, breaking it apart as it browns.
-
Stir in Italian seasoning, salt, pepper, and tomato paste. Cook briefly to release flavors.
-
Pour in beef broth, marinara sauce, diced tomatoes, and water. Mix well.
-
Add lasagna noodles (broken in half), stir to submerge, cover, and simmer for 12–15 minutes, stirring occasionally.
-
When noodles are tender, stir in cottage cheese, parmesan, mozzarella, and spinach until melted and combined.
-
Serve hot with extra cottage cheese and fresh basil garnish if desired.
Notes
Browning the beef and tomato paste deepens flavor.
Any pasta can replace lasagna noodles if needed.
Ricotta can be swapped for cottage cheese for a creamier finish.
Noodles will soak up liquid when stored—add broth when reheating.
Freezes well in portions for 2–3 months.
