Ingredients

1 lb (450 g) beef stew meat

2 cups (475 ml) beef broth

1 cup (240 ml) red wine

2 tbsp (30 g) tomato paste

1 tsp dried thyme

1 bay leaf

Instructions

In a large pot over medium heat, brown the beef on all sides.

Add onion and garlic; cook until softened and fragrant (3–5 minutes).

Stir in tomato paste, thyme, and bay leaf.

Deglaze with red wine, scraping the bottom of the pot.

Add beef broth, carrots, and potatoes; stir well.

Bring to a boil, reduce heat, and simmer uncovered for 90–120 minutes until the beef is tender.
