Cowboy Stew is a hearty, smoky one-pot meal that combines bacon, kielbasa, ground beef, beans, corn, potatoes, and green chilies for a rustic, comforting dish. It’s easy to make, feeds a crowd, and brings all the warm, bold flavors of campfire cooking right to your kitchen.
Ingredients

4 slices bacon, chopped

2 (12 oz) packages kielbasa sausage, sliced

1½ lbs ground beef (80/20)

1 medium onion, diced

3 cloves garlic, minced

3 tbsp all-purpose flour

1½ tsp salt

½ tsp black pepper

1 tsp chili powder

1 (14.5 oz) can petite diced tomatoes, with liquid

2 (16 oz) cans baked or ranch-style beans, with liquid

1 (7 oz) can chopped green chilies, with liquid

1 (15 oz) can sweet corn, with liquid

2 medium russet potatoes, peeled and cubed

1 cup water

2 tbsp chopped parsley
Instructions

In a large pot, cook chopped bacon over medium heat until crispy. Remove and set aside.

In the same pot, brown the sliced kielbasa. Remove and set aside with bacon.

Add ground beef, diced onion, and garlic. Cook until the beef is no longer pink.

Sprinkle in flour, salt, pepper, and chili powder. Stir and cook for 1 minute.

Add diced tomatoes, beans, green chilies, corn, potatoes, reserved bacon and kielbasa, and water. Stir to combine.

Bring to a boil, reduce heat, cover, and simmer for 1 hour, stirring occasionally.

Garnish with chopped parsley and serve. Add water if the stew thickens too much.
Notes
Chop ingredients ahead for easier cooking.
Add jalapeño for more heat or extra vegetables like bell peppers or carrots.
Store leftovers in the fridge up to 4 days or freeze up to 3 months.
Reheat gently on the stove or microwave with a splash of water if needed.
Great with cornbread, biscuits, or a crisp salad.
