Description

Fresh Tomato Cucumber Avocado Salad with mozzarella balls and basil pesto dressing. A light, flavorful salad perfect for spring and summer meals, potlucks, and healthy sides.


Ingredients

Scale
  • 1/2 pound red cherry tomatoes, halved
  • 1/2 pound yellow cherry tomatoes, halved
  • 2 avocados, diced
  • 1 cucumber, sliced
  • 1/3 cup red onion, diced
  • 8 ounces fresh mozzarella balls
  • 1/4 cup basil pesto
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Add halved tomatoes, diced avocado, sliced cucumber, diced red onion, and mozzarella balls to a large bowl
  2. Add basil pesto and lemon juice
  3. Gently toss until evenly coated
  4. Season with salt and pepper to taste
  5. Serve immediately or chill briefly before serving

Notes

  1. Use ripe but firm avocados for best texture
  2. Add extra pesto if a stronger flavor is desired
  3. Best enjoyed fresh
