Description

Ingredients

  • 1 (9-inch) pie shell
  • 3 to 4 large tomatoes
  • 1/2 teaspoon kosher salt
  • 1/2 cup chopped yellow or red onion
  • 1/4 cup fresh basil, sliced
  • 2 cups grated cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon hot sauce
  • Freshly ground black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Pre-bake pie crust until lightly golden.
  3. Drain chopped salted tomatoes thoroughly.
  4. Spread onion in crust.
  5. Layer tomatoes over onion.
  6. Sprinkle basil over tomatoes.
  7. Mix cheese, mayonnaise, hot sauce, and pepper.
  8. Spread cheese mixture over tomatoes.
  9. Bake 25 to 45 minutes until golden and bubbly.
  10. Cool 10 minutes before serving.
