Description

This creamy tortellini carbonara blends cheese-filled tortellini with a silky parmesan and egg sauce for a rich, comforting Italian meal.


Ingredients

Scale

18 oz Tortellini cheese-stuffed

2 large Eggs

1 cup Parmesan Cheese grated

6 oz Pancetta or Bacon diced

2 cloves Garlic minced

Black Pepper to taste

Salt to taste

2 tbsp Fresh Parsley chopped


Instructions

1. Bring a pot of salted water to a boil and cook tortellini until al dente. Reserve 1/4 cup pasta water and drain.

2. Whisk eggs and parmesan in a bowl until smooth.

3. Cook pancetta in a skillet until crispy. Add garlic in the final minute.

4. Add tortellini to the skillet and remove from heat.

5. Pour egg mixture over pasta while stirring constantly.

6. Add pasta water as needed until sauce becomes silky.

7. Season with pepper and salt. Add parsley and extra parmesan before serving.

Notes

Use freshly grated parmesan for the smoothest result.

Add pasta water slowly to avoid thinning the sauce too much.

Serve immediately for the creamiest texture.
