Description

Traeger Pizza Meatloaf is a delicious fusion of classic meatloaf and your favorite pizza flavors—smoky, cheesy, and full of comfort. Made with a mix of ground beef and Italian sausage, stuffed with mozzarella, pepperoni, and marinara, then smoked on a Traeger grill, this meatloaf is juicy, flavorful, and always a crowd-pleaser.

Ingredients

Scale

Meatloaf Base:

  • 1½ lbs ground beef (80/20)

  • ½ lb Italian sausage

  • 2 eggs

  • 1 cup Italian breadcrumbs

  • 1 tablespoon Italian seasoning

  • Salt and black pepper, to taste

Stuffing:

  • 20–25 pepperoni slices

  • 1½ cups fresh mozzarella, shredded or sliced

  • ½ cup San Marzano tomatoes, crushed

  • 6–8 fresh basil leaves

Marinara Sauce:

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 cup San Marzano tomatoes, crushed

  • 1 teaspoon oregano

  • Pinch of sugar (optional)

Optional Toppings:

  • Extra mozzarella (for topping)

  • Fresh basil (for garnish)

Instructions

  1. Preheat Grill:

    • Preheat your Traeger pellet grill to 275°F. Use hickory or mesquite pellets for best flavor.

  2. Make the Meat Mixture:

    • In a bowl, mix ground beef, sausage, eggs, breadcrumbs, seasoning, salt, and pepper. Don’t overmix.

  3. Form and Fill:

    • Spread meat mixture on parchment into a rectangle (1–1.5 inches thick).

    • Layer with pepperoni, mozzarella, tomatoes, and basil.

    • Roll or fold meat over filling, sealing edges to form a loaf.

  4. Prepare Marinara Sauce:

    • In a small pan, heat oil. Sauté garlic for 1–2 minutes.

    • Add tomatoes, oregano, and sugar (if needed). Simmer for 15–20 minutes.

  5. Smoke the Meatloaf:

    • Place loaf on grill. Smoke at 275°F for 1 hour.

    • Increase heat to 300°F. Cook 15–30 more minutes, until internal temp reaches 160°F.

  6. Finish and Serve:

    • Spoon marinara over meatloaf in final 10 minutes.

    • Add cheese if desired and let melt.

    • Rest 10–15 minutes before slicing. Garnish with fresh basil.

Notes

Customize with other cheeses like Gouda or Parmesan.

Use pork panko for a low-carb version.
