- 8.8 ounces dried pasta (any shape)
- 7 ounces canned tuna, drained
- 2 medium fresh tomatoes, diced
- 1/2 cup canned diced tomatoes
- 1 small onion, finely diced
- 2 tablespoons unsalted butter
- 2 tablespoons chopped fresh parsley or basil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/4 cup pasta water, then drain.
- Melt butter in a skillet over medium heat and sauté diced onion for 2 to 3 minutes until soft.
- Add fresh tomatoes and canned tomatoes, season with salt and pepper, and simmer 5 to 7 minutes until thickened.
- Stir in drained tuna, breaking into chunks, and cook 1 to 2 minutes until heated through.
- Add cooked pasta and chopped herbs, tossing to combine. Add reserved pasta water if needed.
- Serve immediately topped with grated Parmesan cheese.
Notes
- Use tuna packed in olive oil for richer flavor or water-packed tuna for a lighter dish.
- Add red pepper flakes for heat.
- Store leftovers in the refrigerator for up to 2 days and reheat gently with a splash of water.
- Substitute canned crushed tomatoes for diced tomatoes if preferred.
