Description

Creamy tuna spread made with eggs, avocado, and herbs, served on golden toasted bread for a quick and satisfying sandwich.


Ingredients

Scale
  • 2 slices sandwich bread
  • 5 oz canned tuna in oil, drained
  • 2 large eggs
  • 1/2 ripe avocado
  • 1/2 small shallot, finely minced
  • 1 tablespoon cream cheese, softened
  • Salt, to taste
  • Ground black pepper, to taste
  • 12 tablespoons fresh herbs or greens, finely chopped
  • 1 tablespoon butter, for toasting

Instructions

  1. Place eggs in a saucepan, cover with water, and bring to a boil. Reduce heat and simmer for 9–10 minutes.
  2. Transfer eggs to cold water, peel, and finely chop.
  3. In a bowl, combine tuna, eggs, avocado, shallot, and cream cheese.
  4. Season with salt and pepper, mix until smooth, and stir in herbs.
  5. Butter one side of each bread slice and toast until golden.
  6. Spread tuna mixture on one slice and top with the second slice.
  7. Serve immediately.

Notes

  1. Substitute Greek yogurt or mayonnaise for cream cheese if desired.
  2. Add diced cucumber or celery for extra texture.
  3. Store tuna mixture in an airtight container for up to 24 hours.
