Description

A quick, healthy one-pan skillet made with lean ground turkey, tender zucchini, and simple spices, perfect for busy weeknights.


Ingredients

Scale
  • 1 lb lean ground turkey
  • 2 medium zucchinis, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 teaspoon chili flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley or basil (optional)
  • Lemon wedges (optional)

Instructions

  1. Dice the zucchini, onion, and garlic and set aside.
  2. Heat olive oil in a large skillet over medium heat and cook the ground turkey until browned, breaking it apart as it cooks, then remove and set aside.
  3. In the same skillet, sauté the onion and garlic until softened and fragrant.
  4. Add the zucchini and cook until tender but still slightly firm.
  5. Return the turkey to the skillet, season with paprika, salt, pepper, and chili flakes, and stir until well combined and heated through.

Notes

  1. Do not overcook the zucchini to keep the texture firm.
  2. Add a squeeze of fresh lemon juice before serving for brightness.
  3. Parmesan and fresh herbs are optional but add extra flavor.
