Description
A simple vegan oatmeal banana dessert made with rolled oats, ripe bananas, and fruit puree, baked until set and finished with peanut butter and dark chocolate.

- 1–2 ripe bananas, sliced
- 1 cup rolled oats (quick-cooking)
- 1/2 cup pear puree or applesauce
- 1–2 teaspoons sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons peanut butter
- 1 oz dark chocolate
Instructions
- Preheat the oven to 320°F and line a baking sheet or small baking dish with parchment paper.
- Mix the rolled oats and pear puree in a bowl until evenly combined.
- Spread the mixture into a thin, even layer on the prepared parchment paper.
- Arrange banana slices on top and sprinkle with sugar and cinnamon.
- Bake for 20 minutes until set and lightly golden.
- Warm the peanut butter until pourable.
- Drizzle with peanut butter and melted dark chocolate, then slice and serve.
Notes
- Use very ripe bananas for the best natural sweetness.
- Applesauce may replace pear puree if needed.
- Store leftovers in the refrigerator for up to 2 days and reheat gently.
