- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract

- Juice of 1/2 lemon
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup soy milk or other plant-based milk
- 1/4 cup melted vegan butter or coconut oil
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F and grease a 9×9-inch baking dish.
- Combine peaches, sugar, cornstarch, vanilla, cinnamon, nutmeg, lemon zest, and lemon juice in a bowl.
- Spread the peach mixture into the prepared baking dish.
- Whisk flour, sugar, baking powder, and salt in another bowl.
- Mix plant-based milk, melted vegan butter, and vanilla extract in a small bowl.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Drop spoonfuls of batter evenly over the peach filling.
- Bake for 35 to 40 minutes until golden brown and bubbly.
- Cool slightly before serving warm.
