Description

A hearty and comforting vegetable orzo soup made in one pot with tender vegetables, tomato broth, and delicate pasta. Perfect for a cozy, meatless meal.


Ingredients

  • 4 tablespoons butter or olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 1 cup chopped celery
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 medium potatoes, cut into 1/2-inch cubes
  • 1 (14.5-ounce) can diced tomatoes
  • 6 to 7 cups vegetable broth
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon Italian seasoning
  • 1 teaspoon seasoned salt
  • 1 teaspoon celery salt
  • 1/3 cup dry orzo pasta
  • 1 cup frozen sweet corn
  • 1/2 cup chopped fresh parsley
  • 1/2 teaspoon fresh lemon juice or apple cider vinegar (optional)
  • Kosher salt and fresh black pepper
  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Melt butter or heat olive oil in a large Dutch oven over medium heat and add onion, carrots, and celery with a few pinches of salt, cooking until softened.
  2. Stir in garlic and tomato paste and cook for about 1 minute until fragrant.
  3. Add potatoes, diced tomatoes with juices, vegetable broth, Worcestershire sauce, brown sugar, Italian seasoning, seasoned salt, and celery salt, then bring to a simmer.
  4. Add orzo pasta, reduce heat to medium-low, partially cover, and simmer while stirring occasionally until vegetables and orzo are tender.
  5. Stir in corn during the last few minutes of cooking and season with salt and black pepper to taste.
  6. Remove from heat, stir in parsley and optional lemon juice, and serve with Parmesan if desired.

Notes

  1. Any small pasta can replace orzo, or use rice for a gluten-free option with adjusted cooking time.
  2. Fresh tomatoes may replace canned tomatoes; use about 1 pound.
  3. Parsley can be substituted with fresh basil or dill.
  4. Cooking time may vary depending on vegetable size and heat level.
