Description

Walking Taco Casserole combines seasoned beef, cheese, beans, and crunchy corn chips into one easy Tex-Mex dinner.


Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1 package taco seasoning
  • 1/2 cup water
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chiles
  • 1/2 cup sour cream
  • 1 bag Fritos corn chips
  • 2 cups Mexican-style shredded cheese

Instructions

  1. Preheat oven to 350 degrees F and spray baking dish with nonstick spray.
  2. Brown ground beef in a skillet, then add onion and cook until soft.
  3. Stir in taco seasoning and water and bring to a boil.
  4. Reduce heat and stir in beans, tomatoes, and sour cream until thickened.
  5. Layer corn chips, cheese, beef mixture, and remaining cheese in dish.
  6. Cover and bake 15 minutes, uncover and bake 5 minutes until bubbly.

Notes

  1. Use lean ground beef for best texture.
  2. Ground turkey or chicken works well.
  3. Assemble ahead and refrigerate until ready to bake.
