  • 1 tablespoon (15 ml) lime juice

  • ¼ teaspoon (1.5 g) fine sea salt

  • Pinch black pepper, to taste

  • 3 cups (450 g) cubed watermelon

  • 1 cup (130 g) quartered cucumber

  • ⅓ cup (50 g) crumbled feta cheese (plus more for garnish)


Instructions

  1. In a large bowl, whisk together olive oil, mint, lime juice, sea salt, and pepper until combined.

  2. Add cubed watermelon, cucumber, and feta to the bowl.

  3. Gently toss to coat all ingredients with the dressing.

  4. Garnish with extra mint and feta if desired.

  5. Serve immediately as a chilled side dish or appetizer.
