Description
This moist Weight Watchers Banana Bread uses overripe bananas, unsweetened applesauce, whole wheat flour, and warm spices for a lighter breakfast or snack. Slice the loaf into 16 equal portions for easy serving and tracking.

- 1/3 cup unsweetened applesauce
- 1/2 cup Truvia Sweet Complete Granulated All-Purpose Sweetener
- 2 large eggs
- 3 overripe bananas, mashed until smooth
- 1/4 cup skim milk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups whole wheat flour
- Nonstick cooking spray
- Optional: 1/2 cup semisweet chocolate chips
- Optional: 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 325°F.
- Coat a 9-by-5-inch loaf pan thoroughly with nonstick cooking spray.
- Add the applesauce, Truvia, and eggs to a large bowl. Beat with an electric mixer or whisk until smooth.
- Add the mashed bananas, skim milk, baking soda, vanilla, salt, pumpkin pie spice, and cinnamon. Whisk until evenly combined.
- Fold in optional chocolate chips or chopped walnuts when using.
- Add the whole wheat flour and stir gently until no dry streaks remain. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Sprinkle the top with additional cinnamon, spice, chocolate chips, or walnuts when desired.
- Bake for about 60 minutes, or until a knife or toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for at least 15 minutes.
- Remove the loaf from the pan and transfer it to a wire rack to finish cooling.
- Cut the cooled loaf into 16 equal slices.
Notes
- Use heavily spotted or nearly black bananas for the strongest sweetness and banana flavor.
- Replace the pumpkin pie spice with additional cinnamon when needed, or omit it.
- You may replace the two whole eggs with about four egg whites.
- Adding 1/2 cup semisweet chocolate chips or chopped walnuts may add approximately one Weight Watchers point per serving.
- For mini muffins or mini loaves, begin checking for doneness earlier because smaller portions bake faster.
