White Chocolate Peppermint Cookies

Description

Soft and fluffy cookies filled with gooey white chocolate chips and fresh peppermint pieces in every bite.


Ingredients

Scale

1/2 cup unsalted butter softened

3/4 cup granulated sugar

1 large egg

1 tsp pure vanilla extract

1 3/4 cup all-purpose flour

3/4 tsp baking soda

1/2 tsp salt

1 cup white chocolate chips

1/3 cup peppermint pieces


Instructions

1. Pre-heat oven to 350 degrees.

2. Chop peppermint into small pieces until you have about 1/3 cup.

3. In a large bowl, combine butter, sugar, eggs, and vanilla.

4. Add flour, baking soda, and salt. Mix well. Fold in white chocolate chips.

5. Roll dough into 18 balls. Dip tops in peppermint pieces. Place on lined baking sheet.

6. Bake 10-11 minutes. Cool for 1-2 minutes on sheet, then cool on rack for 10 minutes.

7. Serve and enjoy!

Notes

Cookies stay soft for 3–5 days.

Freeze dough balls for easy baking during the holidays.
