- 4 bone-in chicken thighs
- 1 cup all-purpose flour
- 1 cup self-rising flour
- 1 tablespoon kosher salt
- 1 teaspoon Spanish paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1 cup buttermilk
- Vegetable or peanut oil for frying
Instructions
- Pat chicken dry and optionally brine in salted water.
- Mix flours, salt, paprika, garlic powder, onion powder, and cayenne.
- Whisk buttermilk in a separate bowl.
- Dip chicken in buttermilk, then coat in seasoned flour.
- Heat oil to 350°F.
- Fry chicken 10–15 minutes per side until golden and cooked through.
- Drain on a wire rack and serve warm.
Notes
- Use a thermometer to confirm 165°F internal temperature.
- Rest breaded chicken before frying for better crust.
- Reheat leftovers in the oven for best texture.
