Description

Cheesy baked zucchini bites with a crispy outside and tender inside. Perfect as an appetizer, snack, or side dish.


Ingredients

Scale
  • 2½ cups packed zucchini, shredded
  • 1½ cups white cheddar cheese, shredded
  • ½ cup Panko breadcrumbs
  • 2 large eggs
  • 2 teaspoons garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Shred zucchini and place in a fine mesh strainer over a bowl.
  3. Sprinkle with salt and let sit for 10 minutes.
  4. Measure remaining ingredients into a large bowl.
  5. Squeeze excess moisture from zucchini and add to bowl.
  6. Mix all ingredients until fully combined.
  7. Scoop heaping tablespoons onto baking sheet, spacing 1 inch apart.
  8. Bake for 25 to 30 minutes until golden brown.
  9. Cool slightly before serving.

Notes
