Description

Rich and fudgy zucchini brownies with hidden zucchini and gooey chocolate frosting.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 35 tablespoons water
  • 1/2 cup chopped walnuts optional
  • 3 tablespoons cocoa powder
  • 1/4 cup unsalted butter melted
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Pinch salt

Instructions

  1. Preheat oven to 350°F and prepare a 9×13-inch pan.
  2. Whisk flour cocoa baking soda and salt.
  3. Mix oil sugar and vanilla.
  4. Add dry ingredients and stir.
  5. Fold in zucchini and rest briefly.
  6. Add water gradually if needed.
  7. Stir in walnuts if using.
  8. Spread batter in pan.
  9. Bake 25 to 30 minutes.
  10. Cool completely.
  11. Whisk frosting ingredients until smooth.
  12. Spread frosting over brownies.
  13. Slice and serve.

Notes

  1. Add water carefully to keep brownies fudgy.
  2. Do not squeeze moisture from zucchini.
  3. Store in an airtight container.
