- 1 1/4 cups shredded sharp cheddar cheese
- 2 tablespoons chopped fresh chives
- 1 cup shredded zucchini
Instructions
- Preheat oven to 350°F and line a 9 x 5-inch loaf pan with parchment paper.
- Whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl whisk buttermilk and egg.
- Whisk melted butter into the buttermilk mixture.
- Combine wet and dry ingredients gently without overmixing.
- Fold in cheddar cheese, chives, and zucchini.
- Transfer batter to prepared loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before removing from the pan.
- Slice and serve.
Notes
- Squeeze excess moisture from zucchini if it seems very wet.
- Do not overmix the batter.
- Use sharp cheddar for the best flavor.
- Store leftovers in an airtight container.
