Description

Savory quick bread loaded with zucchini, sharp cheddar cheese, fresh chives, and buttermilk. Perfect alongside soups, stews, and casseroles.


Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup melted butter
  • 1 1/4 cups shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1 cup shredded zucchini

Instructions

  1. Preheat oven to 350°F and line a 9 x 5-inch loaf pan with parchment paper.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl whisk buttermilk and egg.
  4. Whisk melted butter into the buttermilk mixture.
  5. Combine wet and dry ingredients gently without overmixing.
  6. Fold in cheddar cheese, chives, and zucchini.
  7. Transfer batter to prepared loaf pan.
  8. Bake for 60 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes before removing from the pan.
  10. Slice and serve.

Notes

  1. Squeeze excess moisture from zucchini if it seems very wet.
  2. Do not overmix the batter.
  3. Use sharp cheddar for the best flavor.
  4. Store leftovers in an airtight container.
