Description
Easy cheesy zucchini fritters made with shredded zucchini, mozzarella, Parmesan, garlic, eggs, and crispy Panko breadcrumbs. Perfect as an appetizer, snack, or side dish.
Ingredients

- 3 tablespoons avocado, canola, or vegetable oil
- 2 cups shredded zucchini, squeezed dry
- 1 cup Panko breadcrumbs
- 2 eggs
- 1/3 cup fresh grated Parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon fresh cracked black pepper
Instructions
- Grate zucchini and squeeze out as much liquid as possible.
- Place zucchini in a mixing bowl.
- Add breadcrumbs, eggs, Parmesan, mozzarella, garlic, salt, and pepper.
- Mix thoroughly until combined.
- Heat oil in a large skillet over medium heat.
- Scoop portions of mixture and shape into patties.
- Cook fritters for 4 to 6 minutes on the first side until golden.
- Flip once and cook another 4 to 6 minutes.
- Repeat with remaining mixture.
- Serve warm.
Notes
- Squeeze zucchini very well to prevent soggy fritters.
- Cook over medium to medium-low heat.
- Use gluten-free breadcrumbs for a gluten-free version.
- Store leftovers in the refrigerator for up to 4 days.
- Reheat in a skillet or air fryer for best texture.
