Description

Zucchini Noodle Chow Mein is a light, healthy twist on the classic stir-fry. It swaps traditional noodles for spiralized zucchini, keeping all the flavor but cutting down on carbs and calories. Tossed with crisp veggies, protein of your choice, and a savory soy-based sauce, it’s the perfect weeknight dinner for clean eating.

Main Ingredients

  • 3 medium zucchinis, spiralized

  • 1 tbsp olive oil or sesame oil

  • 1 cup sliced bell peppers

  • 1 cup shredded carrots

  • 1 cup shredded cabbage

  • 2 garlic cloves, minced

  • 1 tsp grated fresh ginger

  • ¼ cup chopped green onions

Protein (choose one):

  • 1 cup cooked shredded chicken

  • 1 cup cooked shrimp

  • 1 cup cubed tofu

Chow Mein Sauce

  • 3 tbsp low-sodium soy sauce

  • 1 tbsp oyster sauce (or hoisin sauce for vegetarian)

  • 1 tsp sesame oil

  • 1 tsp cornstarch

  • ½ tsp sugar (optional)

  • 2 tbsp water


Instructions

  1. Prep Ingredients: Wash and cut the veggies. Spiralize the zucchini. Cook the protein if needed. Mix the sauce in a bowl.

  2. Cook Protein: In a pan, heat oil and cook your chosen protein until done. Set aside.

  3. Stir-Fry Veggies: In the same pan, heat oil over medium-high. Add garlic and ginger, cook for 30 seconds. Add bell peppers, carrots, and cabbage. Stir-fry 3–4 minutes.

  4. Add Zoodles: Add zucchini noodles. Stir gently. Cook for 2–3 minutes until just tender.

  5. Add Sauce: Pour the sauce into the pan. Mix well until it thickens, about 1 minute.

  6. Combine and Serve: Add protein and green onions. Stir to combine. Serve hot.

Notes

For vegan: Use tofu and replace oyster sauce with hoisin or soy sauce.

Zoodles cook quickly—don’t overcook or they’ll get soggy.

Can prep veggies and sauce ahead of time for a quick weeknight meal.

Top with sesame seeds or a squeeze of lime for extra flavor.
