Description

Warm and cheesy zucchini rollatini filled with ricotta, Italian sausage, herbs, and marinara sauce for an easy keto dinner.


Ingredients

Scale
  • 3 small to medium zucchini, thinly sliced
  • 1 cup marinara sauce
  • 1 1/2 cups ricotta cheese
  • 1/2 pound ground Italian sausage
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1/2 teaspoon minced garlic
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Salt zucchini slices and rest for 20 minutes.
  3. Pat dry and bake zucchini slices for 10 minutes.
  4. Brown sausage and allow to cool slightly.
  5. Mix sausage, ricotta, Parmesan, garlic, basil, parsley, egg, salt, and pepper.
  6. Spread half the marinara sauce in a baking dish.
  7. Fill and roll each zucchini slice.
  8. Place seam-side down in baking dish.
  9. Top with remaining marinara and mozzarella.
  10. Bake 20 to 25 minutes until golden.
  11. Rest briefly before serving.

Notes

  1. Remove excess moisture from zucchini for best texture.
  2. Ground beef may replace Italian sausage.
  3. Store leftovers refrigerated for up to 4 days.
