Description

A healthy Mexican-inspired casserole made with ground turkey, quinoa, zucchini, black beans, salsa, and melted cheese.


Ingredients

Scale
  • 2 cups cooked quinoa
  • 1 pound ground turkey
  • 1/2 onion, chopped
  • 2 zucchini, diced
  • 1 red bell pepper, diced
  • 1 can black beans, rinsed and drained
  • 1 cup salsa
  • 1 ounce taco seasoning
  • 1 cup shredded Mexican cheese blend
  • 1 avocado, diced (optional)
  • 2 tablespoons chopped cilantro (optional)
  • 1/2 cup sour cream (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Prepare quinoa according to package directions.
  3. Cook turkey and onion in a skillet until turkey is fully cooked.
  4. Combine turkey mixture, quinoa, zucchini, pepper, beans, salsa, and taco seasoning in a bowl.
  5. Transfer mixture to a greased 9 x 13-inch baking dish.
  6. Top with shredded cheese.
  7. Bake for 25 minutes until vegetables are tender and cheese is bubbly.
  8. Serve with avocado, cilantro, and sour cream if desired.

Notes

  1. Drain beans well before mixing.
  2. Add corn or jalapenos for additional flavor.
  3. Store leftovers in the refrigerator for up to 4 days.
