  • 2 large chicken breasts (about 500 g)

  • Salt and pepper, to taste

  • ¼ tsp garlic powder (approx. 1.25 ml)

  • ½ cup (60 g) flour

  • 1 tbsp (15 ml) olive oil

  • 3 tbsp (45 g) unsalted butter, divided

  • ⅓ cup (80 ml) chicken broth

  • 2 tbsp (30 ml) Dijon mustard

  • 1 tbsp (15 ml) honey

  • 1 cup (240 ml) heavy or whipping cream


Instructions

  1. Prep the Chicken:
    Slice chicken breasts in half lengthwise to create four thinner cutlets. Season with salt, pepper, and garlic powder, then dredge lightly in flour.

  2. Sear the Chicken:
    Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden brown and cooked through. Remove and set aside.

  3. Make the Sauce:
    Remove skillet from heat. Add remaining butter, chicken broth, Dijon mustard, and honey. Return to medium heat, whisking until smooth and slightly thickened.

  4. Add the Cream:
    Stir in heavy cream and bring to a gentle simmer. Return chicken to the skillet and let simmer for 5 minutes, allowing the sauce to thicken and coat the chicken.

  5. Serve:
    Spoon the creamy honey mustard sauce over the chicken and serve warm.

Notes

Don’t skip the flour: It helps the sauce adhere beautifully to the chicken.

Use quality Dijon mustard: It’s key for that perfect tangy balance.

Too thick? Add a splash of chicken broth to loosen the sauce.

Too thin? Simmer uncovered a few minutes longer or whisk in a small cornstarch slurry.
