Description

Cucumber Feta Salad is a refreshing and tangy summer side dish that combines crisp cucumber, creamy avocado, and salty feta with a bright lemony vinaigrette. Enhanced with fresh herbs and red onion, it’s a light yet flavorful salad perfect for picnics, BBQs, or quick dinners.

Ingredients

Scale

For the Salad:

  • 1 long English cucumber (~4 cups / 400 g), sliced into half moons

  • 1 small avocado, diced

  • ½ red onion, thinly sliced

  • 115 g (4 oz) crumbled feta cheese

  • 1 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh dill

For the Dressing:

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp red wine vinegar

  • 1 garlic clove, finely minced

  • ½ tsp dried oregano

  • ½ tsp kosher salt

  • ¼ tsp black pepper

Instructions

  • In a large bowl, combine cucumber, avocado, red onion, feta, parsley, and dill.

  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.

  • Pour dressing over the salad and toss gently to coat. Adjust seasoning if needed. Serve immediately.

Notes

Use ripe but firm avocado for best texture.

Chill salad for 15 minutes before serving for extra flavor.

Add tomatoes or olives for a Mediterranean variation.

Add avocado and dressing just before serving if making ahead.
