For the Crust:
- 1 ¼ cups (160g) all-purpose flour
- ½ cup (115g) unsalted butter, cold and cubed
- 1 tbsp granulated sugar
- ¼ tsp salt
- 3–4 tbsp ice water
For the Apple Filling:
- 3 medium apples, peeled, cored, and sliced thinly (Honeycrisp or Granny Smith work well)
- ¼ cup (50g) brown sugar
- 1 tbsp granulated sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 tbsp unsalted butter, cut into small cubes
For the Salted Caramel Sauce:
- ½ cup (100g) granulated sugar
- 2 tbsp unsalted butter
- ¼ cup (60ml) heavy cream
- ½ tsp sea salt
For Assembly:
- 1 egg + 1 tbsp water (egg wash)
- 1 tbsp coarse sugar (optional, for garnish)
Instructions
Make the Crust:
- In a large bowl, whisk together flour, sugar, and salt.
- Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing just until the dough comes together.
- Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Apple Filling:
- In a large bowl, toss apple slices with brown sugar, granulated sugar, cinnamon, nutmeg, cornstarch, vanilla, and lemon juice until well coated. Set aside.
Make the Salted Caramel Sauce:
- In a saucepan over medium heat, melt sugar until golden, stirring occasionally.
- Add butter and stir until melted. Slowly pour in heavy cream, whisking constantly.
- Remove from heat and stir in sea salt. Let cool slightly.
Assemble the Galette:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a floured surface into a 12-inch (30cm) circle.
- Transfer dough to the prepared baking sheet. Arrange apple slices in the center, leaving a 2-inch (5cm) border. Dot with butter cubes.
- Fold the edges over the apples, pleating as you go. Brush the crust with egg wash and sprinkle with coarse sugar.
Bake & Serve:
- Bake for 35-40 minutes or until the crust is golden brown.
- Drizzle with warm salted caramel sauce before serving.
